Raianos Tripe and Black Pudding awaiting recognition as a Traditional Specialty

The process of recognizing Raianos Bucho and Morcela as a Guaranteed Traditional Specialty (ETG), carried out by the Municipal Councils of Guarda and Sabugal , was one of the issues brought to the General Assembly meeting of Pró-Raia – Integrated Development Association of Raia Centro Norte, which took place on July 10, at the facilities of APAL-SIM (Public Waters at Altitude, Intermunicipalized Services), in Guarda.
This action by the two municipalities aims to obtain a quality seal that recognizes and values these traditional sausages, protecting their recipe and promoting their projection at regional, national and international levels.
The Guarda and Sabugal Councils are applying for black pudding and tripe from Raianos to be granted Traditional Specialty Guarantee (TSG) status to enhance and safeguard these two traditional sausages.
The goal is to obtain a quality seal that recognizes and values two traditional recipes that are already deeply rooted in the region and, from there, to have a brand that provides security to consumers, that can have regional and national projection, and that has value.
The municipalities of Guarda and Sabugal hope that certification can be awarded by the Directorate-General for Agriculture and Rural Development (DGADR) by the end of the year.
