Eggs: Is France short of chickens?

Eggs have become one of the French's favorite foods. But is they a victim of their own success? Rich in protein and inexpensive, producers are now struggling to meet demand.
Eggs have become a staple food for the French. A mother of four children interviewed admitted to consuming more and more of them: “It depends on whether I have cakes to make or if there are special events. But I buy about twenty a week.” When asked why more eggs, she replied: “Because we are reducing our consumption of animal protein and because meat is also more expensive.” The French consume an average of six eggs per week per person. As a result, shelves are regularly empty in some supermarkets. No shortage, but some tensions on the market .
With sales up 4.2% year-on-year, the production sector is struggling to keep pace. To meet rising demand, 300 more chicken coops, or an additional one million hens, would be needed within five years.
